Advisory
For hotels, resorts, groups and owners. We observe first. Then we recommend. Then we help make it real.
What we do
We read the property in operation, find where beverage, service and brand have drifted apart, and bring them back together as one system. Then we train the people who will hold it.
Beverage Design & Operations
A guest should taste where they are. We design beverage programmes as complete systems, with drinks that could only belong to this property, and the operations to deliver them at margin. This is Beverage Architecture, the method Jorge David created.
- Signature drinks with full recipe specifications and costing
- Non-alcoholic and low-alcohol programmes
- Menu engineering, pricing and pour-cost targets
- Bar operations: standards, inventory, cost control and suppliers
- The drinks across the guest’s day, from arrival to the last glass
Service Philosophy & Team Training
The principles that make a great bar should hold at every point a guest meets the property. We train teams in timing, language and restraint through the Rhythm Standard™, and we keep coming back until it holds under pressure.
- One service philosophy across departments
- Service rhythm across teams, shifts and seasons
- The language of service: what is said, and what is left unsaid
- Arrival and transition moments
- Preparation for the busiest nights
Brand Positioning & Identity
When what the guest experiences changes, the brand has to change with it. If it doesn’t, the market hears one thing and the guest feels another, and the investment is undermined.
- Market and competitor analysis, and positioning
- Brand identity, new or repositioned
- Guest profiles and segments
- Visual direction and creative oversight
- Launch and marketing plans
Hospitality & Retained Advisory
For owners and operators who want a thinking partner through openings, repositionings, acquisitions or a difficult season. Retained advisory is a relationship, not a project: regular oversight that protects margin, consistency and the standard as the property changes.
- Hospitality Diagnostic and a written recommendation
- Pre-opening and repositioning support
- Monthly oversight and leadership calibration
- Guardian review and renewal

What you get
A standard your team can hold without us.
Every proposal states what is included, what is not, the deliverables, the timeline and the number of revisions. Every engagement ends with a handover, and with Guardians inside your team who know why the standard exists and how to protect it.
Questions
What owners usually ask first.
How does an engagement start?
With a conversation, then a Hospitality Diagnostic. We observe the property in operation, on site or partly remotely, and give you a written reading of what we found and what we recommend. You decide what happens next.
Do you replace our team or our agency?
No. We work with your team, not around it. During every engagement we train one or two of your people as Guardians, so the standard is held from inside the property once we leave.
Where do you work?
We are based in Luxembourg and California and work with properties across Europe and the United States. Travel is agreed in the proposal.
Can you help before a hotel opens?
Yes. Pre-opening and repositioning are when beverage, service and brand most need to be designed together. The earlier we are involved, the less has to be undone.
How are fees set?
Every engagement is scoped in a written proposal after the first conversation. It sets out what is included, what is not, the deliverables, the timeline and the investment. We don’t publish prices.
Do you only work on beverage?
No. Beverage is one of our specialities, but the work covers service, training, brand and the guest experience as a whole.
